Savor the Season: Pickling, Preserving & Healthy Summer Eats

Learn the basics of safe pickling, preserving, and seasonal nutrition — and walk away with simple ideas for every table.

Summer's bounty is best when you know what to do with it. In this hands-on workshop, participants will explore the basics of safe home pickling and preserving — from proper food safety practices to storing fresh summer vegetables at their peak. We will dive into the nutritional benefits of both pickled and fresh summer produce, exploring how seasonal vegetables contribute to a balanced diet through vitamins, minerals, fiber, and hydration. Along the way, participants will discover a variety of popular summer vegetables and walk away with simple, practical ideas for incorporating them into everyday meals and snacks at home. Whether you are a seasoned home cook or just getting started, this workshop offers something delicious and useful for everyone at the table.


Participants will:
  • Describe the basics of safe home pickling and preserving, including proper food safety practices for storing fresh summer vegetables.
  • Identify the nutritional benefits of pickled and fresh summer vegetables, including how they contribute to a balanced diet through vitamins, minerals, fiber, and hydration.
  • Recognize a variety of popular summer vegetables and learn simple ways to incorporate them into healthy meals and snacks at home.


Instructor: Allison Acquisto DHSc, RDN, LDN. Director of Nourishment, Education & Coaching

Allison is a Nutrition Education Professional and Registered Dietitian Nutritionist with 30+ years in teaching culinary nutrition, medical nutrition therapy, health and wellness training, and professional development. Areas of specialty include individual and group education and counseling in the Food As Medicine realm, preventive health through whole food nutrition, intuitive eating, evidence based clinical and long term care, and community nutrition. Allison is a graduate of the University of Rhode Island, Johnson & Wales University, and earned her doctorate in health sciences degree from A.T. Still University. Her favorite population to work with is the ever-inspiring older adults!
